On days where you can’t find the energy to cook a big meal and yet find the regular instant noodle or fried rice too boring, you can try this recipe to upgrade the regular fried rice to Kimchi fried rice.
The ingredients needed are fairly simple.
1 bowl of cooked rice. You can use overnight rice since it will a drier fried rice
1/2 bowl of fermented kimchi chopped into small pieces together with the kimchi juices
The rest is really up to you depending on what toppings you like or what you can find in the fridge. For me, I found crab stick, luncheon meat and frozen vegetables. You can also use canned tuna, chicken breast or pork.
In terms of seasoning, you just need sesame oil, oyster sauce and pepper.
Firstly, stir fry the chopped kimchi in 2 tablespoons of oil for 1 min.
When the kimchi starts to brown slightly, add in the rest of the toppings to stir fry for another 2 mins till cooked
Add in 2 tablespoons of oyster sauce, 1 tablespoon of sesame oil to the ingredients.
Pour in the rice and stir fry with the ingredients together. At this point, for those who like their rice spicy, can also include half a tablespoons of Korean chilli paste ( gochujang)
Continuously stir fry the rice and the ingredients till they are well mixed together and the seasoning has coated the rice nicely. This should take less than 3 mins but will require constant stirring and flipping the rice to ensure the rice has a thoroughly fried flavour.
The rice is now ready to plate
For the perfect fried kimchi rice, add a sunny side up on the rice for a more layered flavour. In less than 10 mins, you can have this well-flavoured kimchi fried rice.
