On the day we arrived in Chongqing, we had no restaurant in mind, and I did not do any research at all, so we wandered around and ended up in a mall near our hotel. Located in Jie Fang Bei Ba Yi Mall, we found a shrimp hotpot which seems quite unique

Unlike other hotpots, the restaurant offers a base hotpot with stir-fry prawns and a gravy before adding on a basic broth for customers to enjoy with other ingredients
The restaurant was empty when we entered, as most of the other restaurants were having a break before dinner time. The staff was very nice and welcoming, and offered to introduce their dishes to us while other restaurants were pretending not to notice. They have a small condiment bar area where customers can get cut chilli, spring onion, minced garlic and more for their hotpot

We chose the mildly spicy version, which came with vegetables like cucumber, corn and parsley. The dish itself is sweet, spicy and savoury, which is quite good when paired with rice. There were quite a lot of prawns given in the pot with half a pot of gravy, which was quite salty if drunk on its own. The ingredients were generally ok, although not the freshest; you can tell from the texture that they are probably frozen prawns

After we were almost done with the prawns, the staff helped to add a basic bone broth to our pot to make it into a slightly spicy prawn broth to cook our hot pot ingredients
Since the original pot already had quite a several prawns and vegetables, we added some simple ingredients like cabbage, pork belly slices, duck blood, enoki mushrooms and for dessert, rice cake with brown sugar and peanut powder
Most of the meat items were frozen, just like the prawns, which affected the texture of the meat slightly. The soup broth was different from our usual hotpot and was refreshing for a change. The food was ok, but did not really wow me too much, as I prefer fresh ingredients for my hot pot
