We had extra yam from making the yam and roast pork dish so we decided to make some Teochew Yam cake. Firstly, we will need half a yam diced into small cubes.
You will need 100 grams of dried shrimps soaked, 3 Chinese dried mushrooms soaked and diced, 3 sticks of Chinese sausage diced. You can increase the mushrooms or any of the ingredients depending on your preference.
Stir fry minced garlic ( 3 cloves) and shallots in oil ( 1 tablespoons ). We used the ready made shallots in oil which are sold in a bottle.
Once the garlic turn slightly brown, you can include the sausage, mushroom and dried shrimps for stir frying.
Once the ingredients are lightly fried and you can start smelling the fragrance of the dried shrimp, pour in the yam cubes and continue to stir fry them. While they are cooking, you can prepare the base of the cake.
We will make the base using 600 grams of rice flour. We usually buy this brand and can be found in all major supermarket.
Mix the rice flour with 1400 ml of water
Make sure that there is no lump and the mixture is smooth.
Pour the mixture into the pan where the ingredients are frying. Turn your pan to medium heat.
Mix the ingredients to make sure the flour mixture and the ingredients are well distributed.
Continue to stir the mixture till it solidify to soft clumps. Do not over cook the mixture till it is too dry. Make sure that while the mixture is in solid form, it can still be shaped.
Put the mixture into cake tins. Before this, you can oil the tins slightly so it will be easy to remove after steaming.
Even out the mixture until the height is the same across the tin.
Steam the mixture for 1 hour and cool off the yam cake for storage.
You can eat the yam cake in 2 ways. Either steamed or pan fried. Once the yam cake is cooled, you can cut them into square pieces and store them in the fridge. When you want to eat them, you can steam them if you like it steamed or simply pan fried them till golden brown. These make good breakfast or tea snacks. Before serving, you can sprinkle fresh spring onions and roasted sesame on top of the yam cakes for a more refreshing taste.
